This is the vegan kimchi fermenting in my fridge. I’ve used your vegetarian beetroot soup with crystalline salt as a sauce base instead of fish sauce. Added sea minerals and also life starter for the fermentation process. Cannot tahan… already ate🤣🤣🤣, although it hasn't turned sour yet. It tastes good! Another thing I want to share with you. I blended the wakame into powder and put it into my kimchi. It's very nice and has a great umami taste.
